Air Fryer Turkey Kofta Traybake

Try this one for something different tonight! Turkey steaks can dry out in the air fryer, but make little kofta patties from turkey mince and they fry up beautifully for this fattoush-style salad. Fattoush is a Lebanese salad, which I've adapted here.

Ingredients

  • ground cumin 2 tsp
  • ground coriander 2 tsp
  • paprika 1 tsp
  • all spice ½ tsp
  • dried mint 2 tsp
  • onion granules 1 tsp
  • garlic granules 1 tsp
  • carrot 3
  • beetroot 3 (wedges)
  • cauliflower 1 (chopped)
  • red onion 1 (wedges)
  • fresh parsley 1 handful (chopped)
  • lemon 3 tbsp
  • garlic cloves 1 (crushed)
  • turkey mince 500 g
  • houmous 150 g
  • folded flatbreads 4
  • pomegranate seeds 60 g

Method

Make the kofta spice blend

  • In a small bowl combine the ground cumin, ground coriander, paprika, allspice, mint, onion granules, garlic granules, add salt and pepper to taste.

Prep the veg

  • Peel and thickly slice the carrot on the diagonal. Peel and cut the beetroot into 8 wedges. Chop the cauliflower into small florets. Peel and cut the red onion into wedges.
  • Finely chop the parsley. Juice the lemon. Peel and crush the garlic.

Prepare the kofta

  • Combine the turkey mince with ½ of the prepared kofta spice blend. Mix well to combine, divide the mixture into equal size portions and roll into balls (4 per serving). Flatten each ball into a patty and set aside. These are you koftas.

Cook the veg

  • In a large bowl combine the carrots and beetroot with ¼ of the kofta spice blend and a dash of oil.
  • Cook in the air fryer for 10 minutes at 180°C. In the same bowl you just used, combine the cauliflower and the red onion with the remaining kofta spice blend and a dash of oil.
  • Once the 10 minutes have passed, add the cauliflower and the onion to the air fryer basket.
  • Place the kofta patties on top of the vegetables and cook for 20 minutes, shaking the basket occasionally.

Make the hummus drizzle

  • In a bowl combine the hummus, a dash of oil, lemon juice and garlic. Season with salt and pepper to taste.

Add the flatbreads to the air fryer

  • Tear up the flatbread into large chunks and spray with a cooking oil spray, or a drizzle of oil. Once the 20 minutes are up, add the flatbreads to the air fryer and cook for 5 minutes at 190°C until the flatbreads are crispy and golden.

Plate Up

  • Plate up and finish with the hummus, pomegranate seeds and the parsley. Enjoy!
