5 Ingredient Chorizo & Butter Bean Stew

Ingredients

  • chorizo 200 g (sliced)
  • harissa paste 2 tbsp
  • butter beans 800 g (drained)
  • chopped tomatoes 800 g
  • spinach 200 g

Method

  • Slice the chorizo.
  • In a large frying pan on a medium heat-high heat, cook the chorizo until it starts to brown, approx 5 minutes. Stir in the harissa paste and cook for 1 minute.
  • Tip in the drained butter beans and chopped tomatoes. Season with a pinch of salt and pepper. Bring to the boil then leave to simmer for 8 minutes, until the sauce starts to thicken.
  • For the last 2 minutes of cooking add the spinach into the pan and stir until it wilts through. Ladle into bowls and enjoy!
