We're kicking off with some new summery recipes from Plate Up (we can make it taste like Summer even if the weather doesn’t want to cooperate)! Say hello to this Pickled peach and butterbean salad recipe; it’s like a colourful dance party on your plate. The juicy sweetness of the peaches combined with the creamy butterbeans, crunchy vegetables, and smacked cucumber make this a tasty and refreshing salad packed with flavour. This recipe is great if you have peaches that are not looking their best, helping minimise food waste. Ready in just 20 minutes, you can whip this recipe up mid-week or have it as a show-stopping side dish at your next barbecue.

In keeping with the salad theme, we have this moreish Chicken Caesar pasta salad recipe, and it tastes insane. Smoky chicken slices combined with tomatoes, charred baby gem lettuce (yes, you can cook your lettuce), and crispy breadcrumbs are all tossed in our quick homemade Caesar salad dressing. A dash of Worcestershire sauce packs an umami punch, working well as a substitute for anchovies. If you prefer, you can also add anchovies to yours. Play around with the salt levels and add lemon to taste; you’re looking for a creamy, tangy dressing that perfectly complements the chicken and charred lettuce. Get ahead on this recipe by cooking extra pasta the night before. If you are lucky to have leftovers, you’ve got yourself a nice lunch the day after!

This Mediterranean chicken traybake has to be up there with one of our favourite all-time recipes; not only is it so easy to make, but it’s packed full of the most colourful and tasty veggies too. This dish makes for a great family midweek meal with only 10 minutes of hands-on prep time required. If you want to get ahead, you can prepare this recipe the night before and pop it in the oven when you are ready to eat. Topped with crumbled feta, it adds a tangy, rich flavour to this recipe, complementing the roasted veggies. It will become a staple recipe in your household.

Finally, we can announce that we are very excited to be working with this year’s 2023 MasterChef contestant, Adam Ball. Adam brings a wealth of culinary knowledge and skills to the table! He is passionate about creating easy and tasty chef-quality recipes at home that the whole family will love, which is why we are delighted to have a range of Adam’s recipes now on Plate Up. This Baked spaghetti recipe is oozing with flavour. Combined together in this reimagined classic, it’s a dish that is both comforting and familiar. Baking it takes it to the next level of bubbling, cheesy goodness. To save time, you can assemble the dish for the oven stage and then finish baking it when you’re ready.
