Egg-citing recipes for Easter weekend
Let's kickstart the long weekend of recipes off with this Pesce, Pesce recipe by the Alberti Twins. Traditionally fish is usually eaten on Good Friday so this recipe felt perfect to share with you all. If you're a seafood lover and want an easy recipe to make, then you'll love this dish. The cod fillets are simmered in a homemade sauce using a variety of store cupboard and fresh ingredients to maximise all the flavours. They are then served with a crusty slice of ciabatta and garnished with fresh parsley, it's a delicious recipe. Buon Appetito!
Next we have this tasty Aubergine Bake by James Wythe or Healthy Living James for those who follow his incredibly delicious recipes! This recipe is a winner all round, it takes under 30 minutes to prepare and cook, it's gluten-free and vegan. The aubergines are roasted and then layered with a delicious tomato sauce and grated vegan cheese and baked until sizzling and golden. Serve with mixed salad or a side of your choice. A great vegan/veggie option to enjoy over the long weekend.
Of course, it wouldn't be Easter without a lamb recipe and this one is a good one. This Spiced Shoulder of Lamb by Cyrus Todiwala served with crispy potatoes and green beans is a winner in our eyes. It's not your traditional lamb roast but that's what we love about it! The succulent lamb is marinated in a blend of fragrant spices and slow-cooked to perfection making it the centrepiece of your Easter table. Don't forget to drizzle over all the gravy goodness and be sure to make seconds, you can never have too much gravy!
Now for the finale, the show stopper of your Easter table. This Chocolate Meringue Cake by Jo Pratt is irresistible, we are already drooling. Not only does it give us that chocolate fix but it is made with only 5 key core ingredients, unbelievable?! It will become a staple recipe in your household when your in a sweet tooth mood which could be everyday, we aren't judging!
