Amazing recipes from award-winning chef Nisha Katona MBE

We recently announced a brand new partnership with Nisha Katona, one of the new Great British Menu judges. This partnership has already introduced a hand picked selection of Nisha’s recipes from her latest best-selling book 30 Minute Mowgli: Fast Easy Indian from the Mowgli Home Kitchen.

As a curry advocate, Nisha has always been fascinated in the anthropology of food. She is not only the author of several cookbooks, including 30 Minute Mowgli and Mowgli Street Food, but she is also a brilliant TV presenter, having been on programmes such as Channel 4's "Sunday Brunch," ITV's Lorraine, and This Morning, among others. Her Mowgli Street Food establishments specialise in Indian home food, parting ways with the conventional British curry house.

This collaboration will provide Plate Up users with their innovative easy-to-shop method for this new line of step-by-step recipes inspired by Indian culture and cuisine. It will also expose chef Nisha Katona to a new generation of tech-savvy consumers, demonstrating how to prepare amazing meals at home in 30 minutes or less.

On approaching every family meal, I think about how, in one pan, I can incorporate as many of our five-a-day as possible. Adding in spinach is a brilliant way to shovel loads of goodness into children without them batting an eye.

Egg curry is very popular in India and every family has their own recipe. I love to give mine a real wake-up call with the addition of fiery English mustard and peppery watercress. The resulting combination of flavours performs a lively dance across your tongue that I can’t get enough of.

This dish was born when, in a moment of inspiration, I poured my glass of gin and tonic onto my marinating salmon steaks and baked them, wondering what alchemy it would perform. They were stunning. The botanicals in the gin bring a high floral note and the tonic, believe it or not, brings an open-hearted honey to this light and elegant sauce.

After School Pepper Pot

This is standard after-school fare for many Hungarian children. In Hungary it is known as Letcho and is extremely popular. It is fragrant and tangy and uses heaps of naturally sweet peppers, so is great for sneaking an extra portion of veg into the kids.

Cauliflower Sugar Snaps Almond Curry

The secret to a good cauliflower curry is to hold your nerve and not add water. The slow and gentle steamy cooking is really important, as is cutting cauliflower into small florets. If the cauliflower is cut too large, it simply won’t cook and will completely exasperate you. Follow the instructions and you can’t go wrong.
